Viola was born in Hague, ND on March 25, 1925 to Eugene and Catherine Wolf, the youngest of six girls. She graduated from Hague High School and taught country school for a short time. She then moved to Bismarck, living with her sister, Mary and worked for the North Dakota State Printer's Office until marrying Floyd Bitz on June 28, 1951. They farmed and ranched between Moffit and Hazelton until retiring and moving to Bismarck in 1989.
While on the farm, Viola enjoyed gardening, canning, raising chickens, teaching church school and cooking for various weddings in the area with her sister, Lennie. She also was an assistant cook at Hazelton School. Viola was also a life-long member of the Rainbow Homemakers in Moffit. She and Floyd also enjoyed many years as members of a Senior Bowling League, Jackpot Bowling and "trips south" as they would call it to visit Prairie Knights Casino. Viola loved to bake and always treated her granddaughters to "cheese pie", which was cottage cheese kuchen, caramel rolls and kneophla soup.
After breaking her hip a few years ago and going through rehab at Baptist Health & Rehab, she decided that was the place for her and it became her home until her death. The staff, nurses and caregivers in the Meadowlark Neighborhood, became her family and she loved each and every one. Thank you all for your love and care.
Viola is survived by her daughter and son-in-law, Mary & Parnel Plante; her granddaughters and their husbands, whom she considered her grandsons, Ashley (Mike) Schumacher and Courtney (Alex) Sieberg.
She was preceded in death by her husband, Floyd, and her five sisters.
